- one medium ripe banana
- two eggs
- butter (melted) and/or coconut oil
- almond flour (if you want to make more but you’re out of bananas)
- cocoa powder
- cocoa nibs
- thin spatula
- mixing bowl (a blender will also do the trick!)
- cooking pan or griddle
Since I’m a terrible lazy cook, I often use my blender to mix simple ingredients. That counts for these pancakes too!
Simply put the banana in the blender, add the two eggs and turn on your blender (liquify). If you want to use some optional ingredients, you can add them to your mix and stir.
Step two, melt a little bit of butter or coconut oil (yumm!) in your pan or griddle. Wait until the oil is warm enough and simply pour the pancake mix straight from your blender.
*Tip: Make small pancakes, its easier to flip them and I find them even more delicious then making them like a regular sized one.
Bake both times about 1-2 minutes and you’re done! If you like, add some fruits while you’re still baking the pancakes so that you’ll have nice and warm fruits.
